Root Beer Float Cake ~ Yummy!

Doesn’t the name of this cake sound yummy enough to make you want to try it? We are big root beer lovers here and so I had to give this a try. I was so surprised at how easy it was to make and everyone who tasted it, L.O.V.E.D. it! My 3 year old who is a frosting lover and only eats the part of cake that is attached to the frosting, ate the entire piece and begged for more… it was that yummy! I am making it again this weekend for a big family dinner and I’m going to try using the Pudding Frosting (with a tsp root beer extract), just to see how it will taste. I am sure it is going to be a big hit with either frosting. Thanks Michelle for sharing this recipe with me!

 

What You Need:

  • 1 mixing bowl
  • beater or a really strong arm and whisk/mixing spoon
  • Greased 9×13 pan
  • Oven preheated to 350°

Cake

  • 1 box of yellow cake mix
  • 2 eggs
  • 1 can root beer or 12 oz root beer (a 2 liter bottle is usually cheaper than a six pack)
  • 1 3oz. box instant vanilla pudding
  • 1 tsp root beer extract

Frosting

  • 1 8 oz tub whipped topping thawed
  • 1/2 cup melted butter (1 stick)
  • 1 cup powdered sugar
  • 1 tsp root beer extract
  • 5 crushed root bear candies (optional)
  • Seal-able bag to crush the candies in and a heavy/hard kitchen utensil to crush with (optional)

Directions:

Step 1: Gather your helpers, preheat the oven to 350°, pre-grease a 9×13 inch pan and pull out the container of whipped .

Don’t they look excited? My kids love having their cousins over!

Step 2: Mix all the ingredients for the cake together until well mixed.

Step 3: Pour batter into the 9×13 inch pan and bake for 25-30 minutes until it is completely baked. Let it cool for 30 minutes before adding the frosting.

Step 4: While the cake is baking put the frosting together. Use the same bowl used for the cake batter once it is rinsed out, so you do not have to dirty another bowl. You can also use the Pudding Frosting Recipe with 1 tsp root beer extract if you want a lighter frosting.

Step 5: Mix all the ingredients for the frosting until will blended and crush the candies. We used a seal-able bag and ice cream scooper. Be careful not to beat the bag up to much because it may get holes in it.

Step 6: Once the cake has cooled for it’s 30 minutes, pour the frosting on top and add crushed root beer candies to make it pretty.

Step 7: You can serve it while it is warm or put it in the fridge and serve it cold. We tried it both ways and decided that it tastes really good warm, but even better cold!

Step 8: Eat and ENJOY! It was a big hit!…

…and see? Everyone was begging for more!
