The past few summers I always feel a bit antsy when the summer time rolls around. Not having access to a car during the day probably made things a little worse and I just wanted to have a little fun. I am sure my kiddos would love some fun, too! As I thought about options available, I started to feel a bit limited on what we could do. In addition to our transportation and budget issues, I still had two young, napping, very slow walking, non-school aged children. Most classes in the area were for older children, out of my price range or if we walked, it would be a very long walk in the middle of the day…yada, yada, yada…you can see my excuse list piling up! lol Then it dawned on me to have our own Summer Camp. For some reason calling it Summer Camp made my 3 year old (at the time) even more excited to particpate.

So to start, I decided we would only do Summer Camp three mornings a week. For us, Monday, Wednesdays and Fridays. That allowed us to join in on a local play group, play with friends, or if we had the car, to go to the library the other two mornings. Then I picked a few categories I wanted to work on each of those mornings each week. Art, Baking and Adventure/Science (Adventure and Science rotated every other week). Usually once a week we would invite a friend or two over to join in on an activity. Pretty simple, right?
Do not think that you have to do 3 new amazing things each week. It was more of the anticipated project.
For instance, we did not always do some new recipe each week for our Baking Day. Sometimes it was brownies and we attempted to make them from scratch… or from a box on a rough day
. BUT, it was their project. Since they could not read, I was there to read the instructions and ask them what they needed. They got out the bowls, ingredients and needed instruments. I had them do any stirring by hand as much as possible. We tasted, smelled, touched everything we added. And they helped clean up everything, too. Can’t forget about that! They absolutely loved it!

Now that my oldest is in school, we were invited to participate in a Summer Camp at his school for $250 for 2 weeks. As fun as that sounded, we passed that opportunity up fast! We like our simple summer fun!

Chocolate dipping is perfect for any occasion, Mother’s Day, a gift for a friend, a fun family night activity, etc. This is also great for a last minute personal gift, because you can do it the night before or day of. My children love to help and for some reason everything just tastes better with chocolate…but that is just my opinion!
Prepare chocolate, layout the food you want dipped and line a cookie sheet or tray with wax paper and place on the table. Prepare the chocolate by melting in a bowl on defrost in the microwave for 1 minute. Stir and repeat defrost every 30 seconds until it is melted completely. I think it is helpful to layout what you want dipped. If you do not want an entire bag of Oreos dipped, do not put the whole bag on the table. Your display does not have to be as put together as below. I just did this for the picture. ;-)
Start dipping. Some helpers need a little demonstration to show proper dipping technique (i.e. one person dipping per bowl at a time, do not lick your fingers or drop leaves in chocolate). My kiddos picked it up really quick and even asked if I could go away, so they could do it on their own. Ha! Nice try!!

And do not forget about the toppings! Toppings are not required, but are a little additional fun and add some color. You can also drizzle a little of the white chocolate on the milk chocolate (or vice versa) to give it a fancy look. Heavier toppings like the Mini M&Ms are better to put on after the chocolate as set for a minute or two, otherwise they slide off. My little helpers are especially fond of the sprinkles!
Once finished, let them set until chocolate has hardened. If you are in a rush, you can place them in the fridge for a few minutes, but it is not necessary. Having your wax paper on a tray is allows you to move the chocolates out of the way or out of sight while they are setting.

My daughter’s birthday is around Halloween and so we like to keep her family birthday party simple and low on the sugar and sweets. My friend, the wonderful Cindy, told me about waffle cakes and we had to give it a try. Basically, you make a regular cake mix, but instead of cooking it in the oven you cook them in the waffle maker. Then you top each waffle with ice cream and all the toppings you want (or have). The kiddos love ice cream and waffles. So, when you put them together, it was a huge hit! I loved that there was no cake decorating stress involved and the kids could help me since it was so simple to put together. This would make a great treat for any occasion where you are looking for something simple, yet, different and totally fun!

Step 1: Make the cake mix as directed on the box. This part is my kiddos’ favorite.

Step 2: Heat up waffle maker and make some waffles! I’m still perfecting my waffle making technique, as you can tell. lol Any tips on getting great looking waffles in a waffle maker out there?
We ended up with more than enough waffles for our family of 4.
Step 3: Add ice cream of choice and toppings, if desired. As you can see the ice cream was plenty for us!
I love this picture, except for the fact that I can’t crop my son’s silly face out. Oh, well. Tis’ life and it is still cute!

Here’s a fun little cool treat any kid is sure to love. In our case, we made this to go with my son’s Pirate Themed Birthday Party.

You can get the specific recipe for Aquarium Cups here, but this is the basics and tips I learned while making it.
What You Need:
Tips:
1. We did the speed method, i.e. the freezer instead of the fridge and used 2 boxes instead of 1.
2. We added the strawberries in the first layer.

It is frosty from the freezer. Sorry!
3. Let the second layer set and add the fish to the jello just before you serve it. Those who saved their fish bowls until the next day said the soggy fish were not appetizing. Also, the top will not be smooth after adding the fish. You are sliding the fish in through the top, so you get the look of a fish bowl from the side.
4. The kids thought it was fun, but of course, they love anything gelatin!
